I don’t love celery. In fact, next to mushrooms and tomatoes its my least favorite. I know you are all thinking mushrooms and tomatoes? What is wrong with you? I’m working on it, I swear.
I like buffalo sauce so much though, that I often can trick myself into eating celery whenever its involved. I play tricks on myself.
I needed celery for a few recipes this week and I knew we would have leftover celery for days. Matt likes celery but he’s not the raw veggie crunching kind, and although I hate to let vegetables go to waste I couldn’t imagine mindless munching on the stringy stuff. So I came up with a few ideas that included celery, and the red hot sauce that dreams are made of.
Buffalo Chicken Salad
4 boneless, skinless chicken breasts
1/2 cup Frank’s buffalo sauce
1/4 cup shredded cheddar cheese
2 stalks of celery plus more for serving
Boil chicken breasts and immediately shred with a fork. In a bowl combine shredded chicken, buffalo sauce, chopped celery, and shredded cheese. Serve in pitas, on salad, or in a big bun. Top with blue cheese dressing and serve carrot and celery sticks on the side.
Sounds like the perfect Superbowl lunch to me!
