I love recipes that have a few ingredients, are simple to make and highlight some delicious flavors.
Squash + Feta Toss
- 1 large butternut squash
- 1/2 block of feta cheese
- 1/2 a red onion
- parsley [fresh or dried]
- How to: Preheat oven to 425*. Cut and peel butternut squash; check out Roni’s video if you need some pointers. Place cubs of butternut squash on cookie sheet and allow to roast in the oven until they have formed a gorgeous brown crustiness and are softened to the touch. On the stove, put a small amount of butter in a skillet and add chopped onion. Once squash is done and onions are soft add together and toss with some crumbled feta. Top with parsley + enjoy!
